OUR STORY

Our journey commenced when Erin Wise started studying a Bachelor of Agricultural Science at Sydney University and after 2 years decided to work as a Jillaroo on a large sheep station, Wingadee Station at Coonamble and finish her Agricultural studies by correspondence at the University of New England.  She then moved to Haddon Rig Merino Stud in Warren.

After running a cropping an cattle business in Warren for 5 years the family purchased Killarney Stud at Canowindra in the Central west of New South Wales which was formerly a renowned standardbred horse stud.

At the family owned Killarney Stud Erin set about establishing a lamb production business using regenerative farming practices to establish permanent grasses with multi-species cover crops together with minimum till farming.  This process took some time in view of the soil compaction caused by the use of the farm by previous owners breeding and agisting horses for many years.

A couple of years ago the decision was made to focus on Primeline sheep and Lambpro genetics to develop top quality eating lamb with increased marbling.  By 2024 Killarney Stud will have transitioned exclusively to Primeline ewes and lambs and share the vision of Lambro in endeavouring to achieve 7% marbling by 2027.

For this reason we have launched Killarney Lamb to create top quality eating lamb with increased marbling for our customers.

In developing Killarney Lamb we have focused on developing our native pastures regeneratively to grow our lambs which are supplemented with hay and grain primarily grown at Killarney Stud so that we have knowledge of and can control the inputs into the feed for our lambs.

OUR PRODUCT

With the assistance of the award-winning butcher Mountain Side Meats at Berry NSW we are now able to bring our tasty lambs from Canowindra in the Central West of NSW in either half lambs or whole lambs.

A half lamb pack will contain the following in cryovac packages however chop/cutlet numbers may vary slightly depending on the size of the lamb:

  • 1 x leg of lamb
  • 3 x chump chops
  • 8 x short loin chops
  • 8 x cutlets
  • 1.5 kgs sausages
  • 1 x shoulder or 4 x four quarter chops + shank
  • Dog bones

Opening special price is $175.00 for half a lamb or $325 for a whole lamb.
